Ingredients

  • 1 cup quinoa or brown rice
  • 1 sweet potato, cubed
  • 1 cup cooked chickpeas
  • 1 avocado, sliced

  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tahini sauce: 1/4 cup tahini, 1 tablespoon lemon juice, 1 teaspoon maple syrup, water to adjust consistency
