Ingredients
- 1 cup quinoa or brown rice
- 1 sweet potato, cubed
- 1 cup cooked chickpeas
- 1 avocado, sliced
- 1 cup Brussels sprouts, halved
- 1 carrot, grated
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Tahini sauce: 1/4 cup tahini, 1 tablespoon lemon juice, 1 teaspoon maple syrup, water to adjust consistency
Execution
Preheat the oven to 200°C (400°F). Toss the sweet potato cubes and Brussels sprouts with olive oil, paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
Meanwhile, cook the quinoa or brown rice according to package instructions.
