Stuffed Bell Peppers Recipe – A Nutritious and Flavorful Winter Meal
Stuffed Bell Peppers are a nutritious and tasty recipe that makes a great filling winter dinner. This recipe is made with bell peppers stuffed with a savory mix of rice, ground beef, spice, tomatoes and more and then baked until perfect.
Ingredients
- 4 bell peppers large (any color)
- 1 1 lb (450g) ground turkey or beef
- 1 cup cooked rice
- 1 onion cut into pieces
- 2 cloves garlic, minced
- One canned (14.5 1 oz) diced tomatoes
- 1 cup tomato paste
- 1 tablespoon dried oregano
- 1 teaspoon of dried basil
- Salt and pepper as desired
- 1 cup of cheese that has been shredded (cheddar or mozzarella or a blend)
- Fresh chopped parsley (optional)
Execution
Pre-heat your oven to 375 degrees Fahrenheit (190degC).
Cut off the tops of the bell peppers, then remove the membranes and seeds. Set aside.
In a large pan prepare the ground beef on medium heat until it is brown. Add the garlic and onion and sauté until the meat is tender.
Mix in the rice that has been cooked chopped tomatoes, tomato paste oregano and basil, salt and pepper. Cook for an additional 5 minutes or until the rice is cooked through.
Scoop the filling into the bell peppers, pressing it in gently. Place the peppers into a baking dish.
Wrap the dish in aluminum foil, and cook for about 30 minutes. The foil should be removed, scatter the cheese on the peppers and bake for a further 10 minutes up to the point that cheese has bubbly and melts.
Sprinkle with fresh parsley just prior to serving.
