Ingredients

  • For the Cake:
    • 1 cup pitted dates chopped
    • 1 tablespoon baking soda
    • 3 cups boiling water
    • 1/4 cup unsweetened butter softened
    • 3/4 cup Brown Sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 1/4 cups all-purpose flour
    • 1 tablespoon baking powder
  • For the Toffee Sauce:
    • 1 cup unsalted butter
    • Half cup brown sugar
    • Half cup thick cream
    • 1 teaspoon vanilla extract

Pre-heat your oven to 350 degrees F (175degC). Grease an 8×8-inch baking dish.

Within a bowl mix the baking soda, dates as well as boiling water. Allow to sit at least 10 minutes in order to let the dates soften.

A large mixing bowl is needed to beat with the brown sugar and butter until it becomes light and fluffy. Incorporate the eggs one at a time, and then mix in the vanilla extract.

While the cake bakes make the sauce toffee. In a pot that is melting the butter, heat it over moderate temperature. Mix in the cream and brown sugar and bring to an unbeatable boil. Reduce the heat, and simmer for five minutes, continuously stirring. Remove from the heat and mix in the vanilla extract.

Once the cake is baked make holes in the top of the cake using a fork or skewer. Pour half the sauce of toffee over the cake and let it sit for several minutes.

Serve warm, with the remaining sauce and an ice scoop of vanilla cream.
