Ingredients
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- Salt and pepper according to your preference
- 1/2 cup onion chopped (optional)
- Spray for cooking or muffin liner

Execution
The oven should be preheated to 350 degrees Fahrenheit (175degC) and
then grease a muffin pan by spraying it with cooking oil or line the
muffin pans with muffin liners.
A large mixing bowl mix the eggs until they’re
smooth
Mix in all the spinach pieces, cheese feta and onions. Add salt
and pepper to taste.
Spread the mixture of eggs evenly in the muffin cups, filling them
about 3/4 full.
Bake for 20 to 25 hours or so until eggs have completely set and
lightly golden on the top.
Allow the muffins to cool in the tin for about a couple of minutes before taking them off.
