Ingredients

  • 1 cup cooked quinoa
  • Half cup beans washed and rinsed
  • 1/2 cup corn kernels
  • 1/2 avocado, diced
  • 3/4 cup of chopped bell peppers
  • 1 cup diced red onion
  • Fresh cilantro, 1/4 cup chopped
  • 1 tablespoon of lime juice
  • 2 tablespoons salsa
  • 1 tablespoon sour-cream (optional)
  • Salt and pepper as desired

Execution

Prepare the base in a bowl, mix the cooked quinoa for the base.

Add the toppings Add corn, black beans avocado red onion, bell pepper and cilantro.

Dressing the Bowl drizzle with salsa and lime juice. You can also add a dollop of sour-cream if you like.
