Ingredients
- 1 cup cooked quinoa
- Half cup beans washed and rinsed
- 1/2 cup corn kernels
- 1/2 avocado, diced
- 3/4 cup of chopped bell peppers
- 1 cup diced red onion
- Fresh cilantro, 1/4 cup chopped
- 1 tablespoon of lime juice
- 2 tablespoons salsa
- 1 tablespoon sour-cream (optional)
- Salt and pepper as desired
Execution
Prepare the base in a bowl, mix the cooked quinoa for the base.
