Ingredients

  • 4 skinless, boneless chicken breasts
  • 2 carrots, cut into rounds
  • 1 broccoli head, cut into florets
  • 2 potatoes, diced
  • One red bell pepper cut into strips
  • Three tablespoons of olive oil
  • 2 teaspoons herbes de Provence
  • 1 teaspoon of paprika
  • Salt and pepper as desired
  • 2 cloves of garlic, chopped

Preparation: Pre-heat your oven to 400 degF (200degC). Cover a large baking sheet with parchment paper in order to avoid sticking.

Marinate the chicken In a small bowl Mix 2 tablespoons of olive oil herbes de Provence along with paprika and chopped garlic, salt and pepper. Sprinkle this mixture evenly over the chicken breasts, then set the chicken breasts aside to marinate while you cook the vegetables.

Prepare the vegetable In an enormous bowl, mix the broccoli, carrots, bell pepper, potatoes with 1 tablespoon olive oil. Sprinkle with salt and pepper.

Bake: Place the chicken breasts in the middle on the baking tray. Place the vegetables on top of the chicken in one layer, to ensure an even cooking. Bake for about 25-30 minutes, turning the veggies halfway through to ensure that the chicken is cooked to temperatures of 165 degrees F (75degC) as well as the chicken is tender and golden.

Serve Cut the chicken breasts into pieces and serve them with the vegetables roasted to create a balanced and complete dish. Serve with an ounce of lemon juice or fresh herbs such as parsley to add a hint of freshness.
