Ingredients
- One entire garlic bulb
- 1 cup mayonnaise
- One tablespoon of lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper according to your preference

Execution
Step 1: Roast the Garlic
Pre-heat your oven to 400°F (200degC). Remove the top of the garlic bulb, rub it with olive oil and cover it with aluminum foil. The garlic will roast for 30-35 minutes, or until garlic becomes firm and golden. Cool it down before making it easy to handle
Step 2: Prepare the Aioli Base
In a mixing bowl of medium size Mix the mayonnaise with lemon juice as well as Dijon mustard. Mix until thoroughly mixed.
Step 3: Add the Roasted Garlic
When the garlic has cooled then squeeze the cloves from their skins, then mash the garlic into a paste with an fork. Incorporate this garlic-roasted paste into the mayonnaise and mix until it is fully integrated.
