Introduction

Winter Ratatouille – A Flavorful Vegetable Stew

Winter Ratatouille is a delicious and filling vegetable stew that highlights the finest of seasonal vegetables. This traditional French dish is delicious and filling making it the perfect winter dish.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 1 eggplant, diced
  • 1 zucchini, diced
  • One yellow squash cut into pieces
  • 1 bell pepper red diced
  • One container (14.5 1 oz) diced tomatoes
  • One teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • Salt and pepper as desired
  • Fresh basil chopped (optional)

Execution

In a large pan prepare the olive oil on moderate temperature. Add the garlic and onion and cook until soft.

Add the zucchini, eggplant along with yellow squash, eggplant, and the red bell pepper. In the oven, cook till all of them soften, around 10 minutes.

Add diced tomatoes, the thyme oregano, salt and pepper. Reduce the heat to a simmer, and cook for 20 to 25 minutes until the vegetables are soft and flavors are come together.

Serve hot and garnish with fresh basil, if desired.
