Ingredients
- 1 cup long-grain rice
- 2 cups of vegetable broth water
- 1 small onion, perfectly chopped
- 2 cloves garlic, minced
- Red bell pepper chopped
1 zucchini, diced
1/2 cup cherry tomatoes, halved
1/4 cup black olives, sliced
1 cup fresh parsley chopped
1 tablespoon olive oil 1 tablespoon olive
1 teaspoon of dried oregano
Salt and pepper as desired
Optional: Feta Cheese for garnish
Execution
1-Preparing the Rice in a saucepan in which you heat olive oil on medium-high high heat. Then add the finely chopped onion as well as minced garlic. stirring until they become to golden brown.
2-Cook the vegetables Add diced bell peppers cherries, and zucchini. In about five minutes, cook until the veggies soften slightly.
