Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt, pepper, garlic powder, paprika (to season chicken)
  • 3 cloves garlic, minced
  • ½ small onion, chopped
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ cup sun-dried tomatoes (in oil), chopped
  • ½ cup chicken broth
  • ½ teaspoon red pepper flakes (optional)
  • 8 oz penne or fettuccine pasta
  • Fresh basil or parsley, chopped (optional garnish)

Instructions

  1. Slice chicken breasts in half lengthwise, pat dry, and season both sides with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. Lower heat to medium. Add garlic and onion to the skillet and cook until soft and fragrant.
  4. Deglaze with chicken broth, then stir in heavy cream, parmesan, and sun-dried tomatoes. Simmer 5–7 minutes until slightly thickened.
  5. Slice cooked chicken and return to the skillet. Simmer 2–3 more minutes to combine flavors.
  6. Cook pasta in salted water until al dente. Drain, reserving some pasta water.
  7. Add cooked pasta to the sauce and mix well. Add a splash of pasta water if needed.
  8. Serve hot topped with extra parmesan, red pepper flakes, and fresh herbs if desired.

Notes

Use fresh parmesan for the best melt and flavor. Don’t boil the cream sauce—keep it to a gentle simmer. Add spinach or bacon for extra variety.
