Ingredients

  • 1 lb (450g) Italian sausage, sliced
  • 1 onion chopped
  • 2 carrots, diced
  • 2 celery stalks chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups dried lentils, rinsed
  • 4 cups of chicken or vegetable broth
  • One canned (14.5 1 oz) diced tomatoes
  • 1 tablespoon dried thyme
  • 1 leaf of a bay
  • Salt and pepper according to your preference
  • Fresh parsley chopped (optional)

Execution

In a large saucepan cook the sausage on moderate temperature. Take it off and place in a bowl to cool.

In the same pan in the same pot, sauté the carrots, onions, garlic, and celery until they soften.

Add the broth, lentils, tomato dices, rosemary along with the bay leaf. Bring the pot to a boil before reducing the heat, and cook for about 25-30 minutes and until lentils have become tender.

Return the sausage back to the pot and cook for a further 10 minutes. Add pepper and salt according to your preference.

Serve hot and garnish with fresh parsley if you like.

About: Lentil and Sausage Stew

  • This stew can be prepared in advance and then reheated since the flavor will only get better as time passes.
  • If you want to make it vegetarian skip the sausage and substitute vegetable broth.
