Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon butter
  • 2 teaspoons sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped green onions (optional, for garnish)
    • For the Vegetables:
  • 1 cup zucchini, sliced into half-moons
  • 1 cup mushrooms, sliced
  • 1/2 cup onion, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
    • For the Yum Yum Sauce (Optional):
  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon water (to thin, if necessary)

Execution

  1. Prepare the Chicken: Heat a large skillet or griddle over medium-high heat. Add vegetable oil and sesame oil.
  2. Cook the Chicken: Add the bite-sized chicken pieces to the hot skillet. Season with garlic powder, ginger powder, salt, and pepper. Cook the chicken for about 5-7 minutes, stirring occasionally until it’s cooked through and golden brown.
  3. Add the Flavors: Reduce the heat to medium, add the soy sauce and butter to the chicken. Stir well to coat the chicken in the flavorful sauce and cook for another 1-2 minutes. Remove the chicken from the skillet and set aside.
  4. Cook the Vegetables: In the same skillet, add a little more oil if needed. Toss in the sliced zucchini, mushrooms, and onions. Season with garlic powder and cook for about 4-5 minutes until the vegetables are tender but still crisp.
  5. Add Soy Sauce and Butter: Stir in the soy sauce and butter with the vegetables, cooking for an additional 1-2 minutes to enhance the flavor.
  6. Make the Yum Yum Sauce (Optional): In a small bowl, combine mayonnaise, ketchup, rice vinegar, sugar, garlic powder, and paprika. Stir until smooth and creamy. Adjust the consistency with water if needed.
  7. Serve: Plate the hibachi chicken and vegetables together. Drizzle with the optional yum yum sauce and sprinkle with chopped green onions if desired. Serve hot with fried rice or noodles.
