Ingredients
- 2 cups of chicken cooked cut into dices
- 1/2 cup plain Greek yogurt
- 1 stalk of celery, chopped
- 1 cup of chopped walnuts
- 1/2 cup dried raisins Cranberries
- 1 tablespoon Dijon mustard
- Salt and pepper according to your preference
- Lettuce leaves, or whole-grain bread to serve
Execution
Cook the Chicken If there isn’t a chicken cooked then you can cook it by cooking or boiling chicken breasts. After cooking let it cool before you chop it up.
Mix the ingredients in the bowl of a big one, mix with the Greek yogurt Dijon mustard, salt and pepper. Add the chicken diced along with celery, walnuts and raisins. Mix thoroughly until all ingredients are covered by the yogurt dressing.
Assemble Serve the salad of chicken on lettuce leaves as an option that is low in carbs or to fill sandwiches that are made of whole grain bread. It can also be served with crackers as quick snacks.
