Ingredients:

  • 2 boneless skinless chicken breasts cut into dices
  • 1 lb smoked sausage, sliced
  • 2 tbsp olive oil
  • 1 large onion chopped

  • 2 celery stalks chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups long-grain rice
  • 2 1/2 cups chicken broth
  • 1 can (14.5 OZ) diced tomatoes
  • 2 TSP Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp of thyme
  • 1 leaf of a bay

Execution

1- Grill the chicken and sausages: Heat 1 tablespoon of olive oil in a large pan or Dutch oven at medium-high temperature. Then add the chicken diced and cook until the chicken is browned on all sides, around five minutes. Remove the chicken from the pan and put it aside. In the same skillet cook the sausage pieces in approximately 2 to 3 minutes. Place them in a bowl alongside the chicken.

2- Cook the veggies: Add the remaining olive oil to the pan in which you sauté the onions and green bell peppers, celery and garlic until the vegetables are tender, around 5-7 mins.

3- Include rice and the seasonings: Stir in the rice making sure that it is coated in the veggie mixture. Include Cajun seasoning along with thyme, smoked paprika as well as bay leaf. The rice should simmer for about a minute while allowing it to absorb the flavor.

4- Combine all the ingredients: Pour in the soup from the chicken and diced tomatoes (with the juices). Combine everything and bring to a simmer.
