Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Execution

1- Season and sear the chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.

2- Sauté onions and garlic: In the same skillet, melt the butter and add the chopped onions. Cook for about 3 minutes until softened, then add the minced garlic and cook for another minute until fragrant.

3- Make the gravy: Sprinkle the flour over the onions and garlic, stirring constantly to form a roux. Gradually whisk in the chicken broth, making sure to scrape up any browned bits from the bottom of the skillet. Bring the mixture to a simmer, allowing it to thicken slightly.

4- Add cream: Stir in the heavy cream and continue simmering the gravy for another 5 minutes until it thickens to your desired consistency. Season with salt and pepper to taste.Return the chicken: Place the cooked chicken breasts back into the skillet, spooning some of the gravy over the top. Let the chicken simmer in the gravy for a few minutes to absorb the flavors.

5- Serve: Garnish with fresh parsley and serve the chicken and gravy over mashed potatoes, rice, or your favorite side dish.
