Ingredients

  • 1 pound boneless and skinless chicken breasts cut thinly
  • 2 cups of broccoli.
  • One bell pepper cut into slices
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar 1 tablespoon rice
  • 2 cloves of garlic, minced
  • 1 cup grated ginger
  • 2 tablespoons vegetable oils
  • 1 teaspoon sesame seeds (optional)
  • Jasmine rice cooked and ready to serve

Make the Sauce Prepare the Sauce: In one small bowl, mix together honey, soy sauce ginger, rice vinegar and ginger.

Cook the chicken In a large skillet or wok prepare 1 tablespoon vegetable oil over medium-high. Add the chicken pieces and cook until they are browned and cooked to perfection. Take the cooked chicken out of the skillet and place aside.

Cook the vegetables add one tablespoon more oil in the pan. Add the bell pepper and broccoli Stir-fry for 3-4 mins until tender-crisp.

Combine Add the chicken back to the pan, and sprinkle the sauce over the top. Mix to coat everything evenly, and cook for an additional 2 minutes.

Serve Stir-fry over jasmine rice. Garnish with sesame seeds, if you wish.
