Ingredients

  • 2 cups chestnuts that have been roasted chopped, peeled and peeled
  • 2 tablespoons butter that is unsalted
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 1/4 teaspoon dry thyme
  • Salt and pepper according to your preference
  • Fresh chives, cut (optional)

Execution

In a large pan melt the butter over a medium-high temperature. Add the garlic and onion and cook until the garlic is soft.

Mix in the roasted chestnuts and thyme. Let it cook for a couple of minutes to mix the flavors.

Pour in the broth and bring it to a simmer. Reduce the heat, and simmer until 20 to 30 minutes.

Make use of an immersion blender blend the soup until it is smooth. Add the cream, and add pepper and salt to taste.

Serve hot and garnish with fresh chives if you wish.

  • For a more powerful taste, include a splash of sherry or brandy into the soup prior to blending.
