Ingredients
- One tiny head of cauliflower cut into florets
- 1/4 cup buffalo sauce
- Two tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1/2 teaspoon of smoked parika
- Salt and pepper as desired
- 8 small corn tortillas
- 1/2 cup chopped lettuce
- 1 cup chopped red onion
- 1/4 cup ranch dressing (optional)
- Fresh cilantro for garnish
Execution
Make the Cauliflower Pre-heat the oven to 400 degrees F (200degC). A large mixing bowl is used to mix the cauliflower florets using olive oil and garlic powder, as well as salt, smoked paprika and pepper.
Bake the Cauliflower: Spread the cauliflower out on an oven-proof baking sheet. Roast for 20-25 minutes, or until tender and slightly crisp. Mix in buffalo sauce and bake for an additional 5 minutes.
To assemble the Tacos Make your tortillas using a dry pan. In each one, fill them with Buffalo cauliflower lettuce shredded and diced red onion.
Garnish and serve Garnish and Serve: Drizzle with ranch dressing, if you like add fresh chopped cilantro. Serve immediately.
