Execution

1- Prepare the marinade: In a small bowl, combine soy sauce, mirin, sake, sugar, minced garlic, and grated ginger. Stir until the sugar is dissolved.

2- Marinate the black cod: Place the black cod fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fish, ensuring the fillets are evenly coated. Marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

3- Preheat the oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
