Hearty Beef and Barley Soup – A Nourishing Winter Comfort Food
Beef and Barley Soup is one of the most nutritious and hearty dishes that is perfect for a winter cold day. The soup is stuffed of tender beef healthy barley and lots of veggies that make it a delicious food served in one bowl.
Ingredients
- 1 Lb (450g) steak stew Cut into cubes
- 2 Tablespoons Olive Oil
- 1 onion cut into pieces
- 2 carrots, diced
- 2 celery stalks chopped
- 2 cloves garlic, minced
- 1 Cup pearl barley
- 8 cups of beef broth
- 1 leaf from a bay
- 1 tablespoon dried thyme
- Salt and pepper as desired
- Fresh parsley chopped (optional)
Execution
In a large saucepan cook the olive oil at medium-high temperature. Cook the beef in small groups, then remove and put aside.
In the same pan in the same pot, sauté the carrots, onion as well as celery and garlic until they soften.
Add the beef broth, barley bay leaf and thyme and browned meat to the pot. Bring the pot to the point of boiling, then lower the heat, and cook for 45 to 1 hour or until the barley and beef are soft.
Add salt and pepper as desired. Take the bay leaf off and add fresh parsley, if you like.
Serve hot, accompanied by crusty bread.

- The soup is even more delicious on the second day of eating it, which makes it ideal to eat leftovers.
- To enhance the flavor, add a little red wine into the soup as it cooks.
